Lotus Lily

Occurs naturally in the wetlands of tropical Australia, in billabongs and permanent lagoons.

The enormous leaves stand proud of the water.  The large pink flowers have a yellow centre.

The rich peanutty tasting seeds can be eaten raw.  More mature seeds can be roasted and crushed for a coffee like beverage.

The young leaves and roots can be cooked or eaten raw.
